Pinakbet na Saging
Savory vegetable medley with green papaya, eggplant, okra, and malunggay — slow-cooked in a savory shrimp paste base. Hearty and healthy.
Instructions
Sauté garlic, onion, and tomato until soft.
Add bagoong and stir-fry for 1 minute until fragrant.
Add the harder vegetables (papaya, squash) and a splash of water. Cover and cook for 15 minutes.
Add eggplant, shrimp, and malunggay. Cook uncovered for 10 minutes, stirring occasionally. Serve hot.
