Pinakbet na Saging

Savory vegetable medley with green papaya, eggplant, okra, and malunggay — slow-cooked in a savory shrimp paste base. Hearty and healthy.

Ingredients

  • 40 g Green papaya, julienned
  • 0.4 pcs Eggplant, halved
  • 20 g Squash, sliced
  • 10 g Malunggay leaves
  • 0.4 tbsp Bagoong (shrimp paste)
  • 20 g Shrimp, deveined
  • 0.4 pcs Tomatoes, quartered
  • 0.2 pcs Onion, sliced
  • 0.6 pcs Garlic, minced

Instructions

  1. Sauté garlic, onion, and tomato until soft.

  2. Add bagoong and stir-fry for 1 minute until fragrant.

  3. Add the harder vegetables (papaya, squash) and a splash of water. Cover and cook for 15 minutes.

  4. Add eggplant, shrimp, and malunggay. Cook uncovered for 10 minutes, stirring occasionally. Serve hot.
