Bibingka

Traditional Filipino rice cake baked with coconut and butter. A Christmas specialty.

⏱ Prep: 25 min ⏱ Cook: 40 min Medium

Ingredients

  • 2.5 cups Rice Flour
  • 1.88 cups Coconut Milk
  • 3.75 large Eggs
  • 0.94 cup Sugar
  • 0.31 cup Butter
  • 5 pieces Salted Duck Egg

Instructions

  1. Preheat oven to 350F. Grease baking pans.

  2. Mix rice flour, sugar. Add eggs and coconut milk, beat smooth.

  3. Pour batter, place 1 salted egg in center of each.

  4. Bake 20 min. Brush with butter, sprinkle coconut flakes.

  5. Bake 15 more minutes until golden. Serve warm.
