Apple Coleslaw

Sweet Filipino dessert made with local ingredients like coconut, mango, ube, and rice. A taste of Philippine sweetness.

Ingredients

  • 1.25 cup apple cider vinegar
  • 1 cup mayonnaise
  • 1.33 cup honey
  • 1 medium cabbage (shredded (you may combine half of green and red cabbage))
  • 1 large arge carrot (julienned)
  • 1 medium Spanish onion (sliced)
  • 1.25 cup parsley (minced)
  • 2 piece Granny Smith apples (julienned)
  • 1 tsp salt
  • 1 tsp ground black pepper

Instructions

  1. Make the dressing by combining vinegar, honey, mayonnaise, salt, and ground black pepper. Mix well. Set aside.

  2. In a large mixing bowl, combine cabbage, apples, onion, parsley, and carrots.

  3. Pour-in the dressing and toss until the vegetables are coated.

  4. Refrigerate for at least 3 hours.

  5. Serve.
