Pro Tips

**Chef's Tips & Troubleshooting:**

- Make sure the pan and oil are hot before adding ingredients for the best sear.

- Fry in batches to avoid overcrowding — lowering the temperature makes food greasy.

- Let the dessert cool completely before slicing or serving for the best texture.

- Do not overmix the batter — mix just until the ingredients are combined to keep the texture light.

Cooking Tips

Pat the meat completely dry with paper towels before frying — moisture is the enemy of crispiness. Use a thermometer to maintain oil temperature at 350–375°F (175–190°C). If the oil is too cool, the food absorbs grease; too hot and it burns on the outside before cooking through.

Ingredient Substitutions

Short on time? A pressure cooker (Instant Pot) can reduce cooking time by roughly half for most braised and stewed Filipino dishes. Reduce liquid slightly since less evaporates.

Storage & Reheating

Store in an airtight container in the refrigerator for up to 3–4 days. The flavors often deepen overnight, making leftovers even more delicious. Crispy dishes are best enjoyed fresh — they lose their crunch when stored. If you must store leftovers, reheat in an air fryer or oven at 375°F (190°C) for 5–7 minutes to restore crispiness. Avoid microwaving crispy dishes — the steam makes the coating soggy. Use a toaster oven or stovetop skillet instead. Reheat on the stovetop over medium-low heat, adding a splash of water or broth if the sauce has thickened during storage. Microwave in 30-second bursts, stirring between each.

Prep: 10 min Cook: 25 min Total: 35 min Medium Serves 4

Instructions

  1. Make the filling by combining mangoes, peaches, sugar, vanilla extract, lemon juice, and salt in a bowl. Mix well.
  2. Pour the mixture in a pan. Cook for 5 minutes.
  3. Combine cornstarch and water to create a slurry. Mix well. Pour the mixture into the pan. Stir and continue cooking until the mixture thickens. Remove from the pan and let it cool down.
  4. Lay each slice of loaf on a chopping board. Slice-out the dark edges. Dust flour on your rolling pin and then flatten each bread slices.
  5. Scoop around 2 ½ tablespoons of filling mixture and put it on the center of the flattened bread. Make bread pockets by covering the filling. Do this by folding the bread symmetrically. Brush beaten egg on the sides and secure it by pressing the edges against each other. Do this step until all the filling are consumed.
  6. Dredge the bread pockets in all-purpose flour. Dip in beaten egg. Roll it in Good Life Breadcrumbs. Spray cooking oil on both sides and then arrange in a clean plate. Let it stay for at least 5 minutes.
  7. Air fry in 370F until the breadcrumbs turns golden brown. Flip the peach mango pie and do the same on the opposite side. Serve.
