Beef with Ampalaya

Traditional Filipino beef with ampalaya recipe

Ingredients

  • 1000 g Beef
  • 2.5 large Ampalaya
  • 10 cloves Garlic
  • 2.5 piece Onions
  • 5 pieces Tomatoes
  • 5 tbsp Soy Sauce
  • 5 tbsp Cooking Oil
  • 5 pieces Bay Leaves

Instructions

  1. Cut the beef into thin strips. Season with salt and pepper.

  2. Core the ampalaya (bitter melon) and slice it into half-moons. Sprinkle with salt and let sit for 10 minutes, then rinse and pat dry to reduce bitterness.

  3. Heat cooking oil in a wok over high heat. Stir-fry the beef strips for 3 minutes until browned. Remove and set aside.

  4. In the same wok, add the garlic, onions, and bay leaves. Sauté for 1 minute until fragrant.

  5. Add the ampalaya and stir-fry for 3 minutes until it begins to soften.

  6. Add the tomatoes and soy sauce. Stir-fry for 2 more minutes.

  7. Return the beef to the wok and toss everything together. Cook for 1 more minute until the sauce coats everything.

  8. Serve hot with steamed rice.
