Beef with Ampalaya
Traditional Filipino beef with ampalaya recipe
Instructions
Cut the beef into thin strips. Season with salt and pepper.
Core the ampalaya (bitter melon) and slice it into half-moons. Sprinkle with salt and let sit for 10 minutes, then rinse and pat dry to reduce bitterness.
Heat cooking oil in a wok over high heat. Stir-fry the beef strips for 3 minutes until browned. Remove and set aside.
In the same wok, add the garlic, onions, and bay leaves. Sauté for 1 minute until fragrant.
Add the ampalaya and stir-fry for 3 minutes until it begins to soften.
Add the tomatoes and soy sauce. Stir-fry for 2 more minutes.
Return the beef to the wok and toss everything together. Cook for 1 more minute until the sauce coats everything.
Serve hot with steamed rice.
