Bangus Bicol Express
Traditional Filipino bangus bicol express recipe
Instructions
Clean the bangus, remove the head and bones, and cut the meat into chunks.
Heat cooking oil in a pan over medium heat. Sauté the garlic and onions until softened.
Add the shrimp paste and fry for 20 seconds until fragrant. Stir in the sliced chili peppers.
Pour in the coconut milk and bring to a gentle simmer.
Carefully add the bangus pieces to the simmering coconut milk. Cook for 5–7 minutes, gently turning once, until the fish is cooked through.
Season with fish sauce to taste. Simmer for 2 more minutes for the flavors to meld.
Serve hot with steamed rice.
