Tamales Manok

Filipino chicken tamales wrapped in banana leaves with annatto marinade.

Ingredients

  • 0.42 kg Chicken thighs
  • 0.21 cup Cornstarch
  • 0.42 tsp Annatto Powder
  • 1.25 tbsp Calamansi juice
  • 0.83 tbsp Fish Sauce
  • 1.67 cloves Garlic minced
  • 5 pieces Banana Leaves

Instructions

  1. Mince chicken to coarse consistency. Mix with cornstarch, annatto, calamansi, fish sauce, garlic. Marinate 1 hour.

  2. Soften banana leaves over flame, cut into rectangles. Place chicken inside, fold tightly.

  3. Steam for 25 minutes until cooked. Serve with soy-calamansi dip.
