Traditional Filipino adobong isaw recipe
Instructions
Clean the pork intestines thoroughly by rinsing multiple times. Trim excess fat and cut into 4-inch lengths.
Heat oil in a large pot over medium-high heat. Sear the intestines on all sides until lightly browned. Remove and set aside.
In the same pot, sauté the garlic until fragrant. Add the bay leaves, black peppercorns, and cook for 30 seconds.
Pour in the soy sauce and vinegar. Add the sugar and enough water to partially cover the aromatics. Bring to a simmer.
Return the seared intestines to the pot. Reduce heat to low, cover, and simmer for 20–25 minutes until the intestines are tender.
Remove the bay leaves. Uncover and increase heat to medium. Simmer for 5 minutes to reduce the sauce until it thickens slightly.
Taste and adjust seasoning. Serve hot with steamed rice and extra vinegar on the side.
