Tamales Manok
Filipino chicken tamales wrapped in banana leaves with annatto marinade.
Instructions
Mince chicken to coarse consistency. Mix with cornstarch, annatto, calamansi, fish sauce, garlic. Marinate 1 hour.
Soften banana leaves over flame, cut into rectangles. Place chicken inside, fold tightly.
Steam for 25 minutes until cooked. Serve with soy-calamansi dip.
