Sinigang na Sardinas

Traditional Filipino sinigang na sardinas recipe

Ingredients

  • 4.5 cans Canned Sardines
  • 4.5 cups Taro Leaves
  • 2.25 piece Radish
  • 11.25 pieces Okra
  • 4.5 pieces Tomatoes
  • 6.75 pieces Sampaloc
  • 2.25 tsp Shrimp Paste

Instructions

  1. Wash the taro leaves, removing the thick central stem. Chop them coarsely.

  2. In a large pot, sauté the shrimp paste for 30 seconds until fragrant. Add the diced tomatoes and cook until softened.

  3. Pour in enough water to cover. Add the slices of sampaloc (tamarind) and bring to a boil.

  4. Add the radish (daikon) chunks and simmer for 10 minutes until beginning to soften.

  5. Add the okra and taro leaves. Simmer for 10 more minutes until the okra and leaves are tender.

  6. Remove the sampaloc slices from the pot. Taste the broth and adjust the sourness with more tamarind or vinegar if needed.

  7. Add the canned sardines with their sauce and heat through for 2 minutes. Serve hot with steamed rice.
