Sinabawang Manok

Traditional Filipino sinabawang manok recipe

Ingredients

  • 1050 g Chicken
  • 5.25 tbsp Shrimp Paste
  • 175 g Chicken Liver
  • 7 cloves Garlic
  • 3.5 tbsp Chili Paste
  • 5.25 stalks Green Onions
  • 3.5 tbsp Cooking Oil

Instructions

  1. Heat cooking oil in a pan over medium heat. Sauté the garlic until golden and fragrant.

  2. Add the shrimp paste and fry for 20 seconds until the aroma develops and the paste darkens.

  3. Add the chicken pieces and brown on all sides, about 3–4 minutes per side.

  4. Stir in the chili paste (siling labuyo blended or crushed) and cook for 1 minute.

  5. Add the chicken liver pieces and cook for 3 minutes until the liver is cooked through.

  6. Pour in a splash of fish sauce and water. Simmer for 5 minutes for the flavors to combine.

  7. Garnish with sliced green onions and serve hot with steamed rice.
