Palm Sugar Pudding

Chewy steamed coconut cake with muscovado palm sugar. A Filipino comfort dessert.

Ingredients

  • 0.8 cup Coconut Milk
  • 1.2 cups Muscovado Sugar
  • 2.4 large Eggs
  • 1.6 cups Cake Flour
  • 0.8 tsp Baking Powder
  • 0.2 cup Butter melted

Instructions

  1. Preheat steamer. Grease small cups with butter.

  2. Whisk eggs and muscovado sugar until frothy.

  3. Fold in flour, baking powder, coconut milk, and melted butter.

  4. Pour into cups and steam for 30 minutes.

  5. Cool before unmolding. Serve at room temperature.
