Paksiw na Isda in Gata

Traditional Filipino paksiw na isda in gata recipe

Ingredients

  • 1125 g Round Fish
  • 2.25 cups Coconut Milk
  • 0.38 cup Vinegar
  • 3 tbsp Tamarind Juice
  • 1.5 tbsp Shrimp Paste
  • 4.5 pieces Chili Peppers
  • 1.5 piece Onions
  • 3 pieces Tomatoes

Instructions

  1. Clean the round fish, scaling and gutting it. Score both sides with diagonal cuts and season with salt.

  2. Heat a small amount of oil in a wide pot over medium heat. Sauté the onions and garlic until softened.

  3. Add the tomatoes and shrimp paste. Stir-fry for 1 minute until aromatic.

  4. Pour in the vinegar and tamarind juice. Add the sliced chili peppers and bring to a simmer.

  5. Gently place the fish in the pot. Spoon the sauce over it and simmer for 5 minutes.

  6. Pour in the coconut milk and continue simmering for 8 minutes until the fish is cooked through and the sauce is fragrant.

  7. Taste and adjust seasoning. Serve hot with steamed rice.
