Paksiw na Isda in Gata
Traditional Filipino paksiw na isda in gata recipe
Instructions
Clean the round fish, scaling and gutting it. Score both sides with diagonal cuts and season with salt.
Heat a small amount of oil in a wide pot over medium heat. Sauté the onions and garlic until softened.
Add the tomatoes and shrimp paste. Stir-fry for 1 minute until aromatic.
Pour in the vinegar and tamarind juice. Add the sliced chili peppers and bring to a simmer.
Gently place the fish in the pot. Spoon the sauce over it and simmer for 5 minutes.
Pour in the coconut milk and continue simmering for 8 minutes until the fish is cooked through and the sauce is fragrant.
Taste and adjust seasoning. Serve hot with steamed rice.
