Mechado

Rich tomato-beef stew simmered until the meat is fork-tender. Deep red, savory, and packed with vegetables.

Ingredients

  • 800 g Beef chuck, cut into cubes
  • 320 g Potatoes, cubed
  • 240 g Carrots, sliced
  • 160 g Green beans
  • 4.8 pcs Tomatoes, chopped
  • 4.8 tbsp Tomato sauce
  • 3.2 tbsp Liver spread (sardines or liver spread)
  • 3.2 pcs Onion, sliced
  • 6.4 pcs Garlic, minced
  • 3.2 pcs Bay leaf
  • 1.6 tbsp Soy sauce
  • 3.2 cups Water
  • 0.8 tsp Sugar

Instructions

  1. Brown the beef on all sides in a heavy pot. Remove and set aside.

  2. In the same pot sauté onion, garlic, tomatoes until soft. Add tomato sauce.

  3. Return the beef. Add bay leaf, soy sauce, sugar, and water. Cover and simmer for 45 minutes.

  4. Add potatoes, carrots, and okra. Simmer another 30 minutes until vegetables are cooked and sauce has thickened.
