Kare-Kare

Classic Filipino oxtail stew in a rich, velvety peanut sauce. Served with bagoong (fermented shrimp paste) on the side.

Ingredients

  • 1320 g Oxtail or beef shank, cut into pieces
  • 440 g Vegetable peels (eggplant, squash, string beans)
  • 6.6 pcs Eggplant (talong), quartered lengthwise
  • 330 g Banana blossom (puso saging), sliced
  • 220 g Green beans
  • 2.2 heads Bunch pey
  • 330 g Peanut powder
  • 4.4 tbsp Tomato paste
  • 4.4 pcs Onion, sliced
  • 17.6 pcs Garlic, whole cloves
  • 6.6 tbsp Shrimp paste (bagoong)

Instructions

  1. Boil oxtail in water for 1.5 hours until tender. Remove and set aside with the broth.

  2. In a pot, sauté onion and garlic. Add tomato paste, then pour in the oxtail broth.

  3. Stir in the peanut powder until dissolved. Simmer for 10 minutes.

  4. Add the vegetables and oxtail. Simmer another 20 minutes.

  5. Serve hot with steamed rice and bagoong on the side.
