Filipino Fried Chicken

Ingredients

  • 1.25 kg Chicken
  • 7.5 pieces Calamansi
  • 0.31 cup Soy Sauce
  • 10 cloves Garlic
  • 5 pieces Bay Leaves
  • 1.25 tsp Black Pepper
  • 1.88 cups Flour
  • 2.5 cups Cooking Oil

Instructions

  1. Cut the chicken into pieces. In a bowl, mix the calamansi juice, soy sauce, crushed garlic, bay leaves, and black pepper to make the marinade.

  2. Coat the chicken pieces in the marinade and let it sit for at least 30 minutes (or overnight in the refrigerator for best flavor).

  3. In a shallow dish, mix the flour with salt and pepper. Dredge each marinated chicken piece in the flour, pressing firmly to create an even coating.

  4. Heat 1.5 inches of cooking oil in a deep pot to 325°F (160°C).

  5. Fry the chicken for 4 minutes on the first side, flipping occasionally. Increase the oil temperature to 375°F (190°C) and fry for another 8–10 minutes until deep golden brown and the internal temperature reaches 165°F (74°C).

  6. Drain on a wire rack. Let rest for 5 minutes before serving.

  7. Serve with a dipping sauce of soy sauce, calamansi, and chili.
