Escabeche

Fish in sweet and sour sauce with pickled vegetables.

Ingredients

  • 400 g Lapu-lapu (grouper), cut into steaks
  • 0.33 cup Tomato sauce
  • 0.17 cup Vinegar
  • 1.33 tbsp Brown sugar
  • 1.33 pcs Onion, sliced
  • 0.67 pcs Carrots, julienned
  • 0.67 pcs Bell pepper, sliced
  • 2.67 pcs Garlic, minced
  • 0.17 cup Flour
  • 2 tbsp oil
  • 1.33 pcs Bay leaves

Instructions

  1. Dredge fish in flour and shallow-fry until golden.

  2. Drop in the garlic, onion and sauté just until they soften.

  3. Add tomato sauce, vinegar, brown sugar, and bay leaves. Simmer 5 minutes.

  4. Place fish on top and spoon sauce over. Serve with rice.
