Chicken Inasal

Classic Cebuano grilled chicken — marinated in calamansi, tomato, and annatto oil. Charcoal-grilled to juicy perfection.

Ingredients

  • 1440 g Whole chicken, quartered
  • 3.6 pcs Calamus root (ato-ato)
  • 7.2 pcs Calamansi juice
  • 1.8 pcs Tomato, sliced
  • 1.8 tbsp Soy sauce
  • 3.6 tbsp Annatto oil (atuy)
  • 1.8 tsp Sugar

Instructions

  1. Blend calamus root, calamansi juice, and tomato. Marinate chicken for 3 hours or overnight.

  2. Grill over charcoal on medium heat, turning every 5 minutes, until cooked through (about 25 minutes).

  3. Baste with annatto oil (atuy) and garlic sauce. Serve with steamed rice and sinangag.
