Chicken Inasal
Classic Cebuano grilled chicken — marinated in calamansi, tomato, and annatto oil. Charcoal-grilled to juicy perfection.
Instructions
Blend calamus root, calamansi juice, and tomato. Marinate chicken for 3 hours or overnight.
Grill over charcoal on medium heat, turning every 5 minutes, until cooked through (about 25 minutes).
Baste with annatto oil (atuy) and garlic sauce. Serve with steamed rice and sinangag.
