Buco Pie

Creamy young coconut pie in a flaky butter crust. A Cebuano bakery favorite.

Ingredients

  • 0.45 cups Young Coconut flesh
  • 0.45 cups Coconut Cream
  • 0.9 large Eggs
  • 0.15 cup Sugar
  • 0.6 tbsp Cornstarch
  • 0.07 cup Butter
  • 0.6 crusts Pie Dough

Instructions

  1. Blind bake pie crusts at 375F for 12 minutes.

  2. Saute diced coconut with butter and sugar 3 minutes.

  3. Whisk coconut cream, eggs, cornstarch into custard. Pour into crust.

  4. Cover with top crust. Bake 25 minutes until golden. Cool and refrigerate.
