Beef Kaldereta

Beef Kaldereta is a rich and hearty Filipino tomato-based stew made with tender beef, potatoes, carrots, bell peppers, and green olives, thickened with liver spread for a deep, savory flavor. This comforting dish is best served hot over steamed white rice.

Ingredients

  • 2 large bs beef (cubed)
  • 3 clove garlic (crushed and chopped)
  • 1 piece onion (finely chopped)
  • 1.25 cup soy sauce
  • 2 cup beef broth
  • 1 cup tomato sauce
  • 1.5 cup liver spread
  • 1 piece red bell pepper (sliced)
  • 1 piece green bell pepper (sliced)
  • 2 cup potatoes (sliced)
  • 2 cup carrots (sliced)
  • 2.33 cup green olives
  • 3 piece dried bay leaves
  • 1 tsp chili flakes
  • 1.25 cup oil
  • 0 salt and ground black pepper to taste

Instructions

  1. Combine the beef and soy sauce in a bowl. Mix well and marinate for 30 minutes.

  2. Heat the cooking oil in a large pot or pressure cooker. Sauté the garlic and onion until fragrant, about 1 to 2 minutes.

  3. Add the marinated beef. Cook while stirring for 3 to 5 minutes, or until the meat turns light brown on all sides.

  4. Pour in the tomato sauce and beef broth. Add the dried bay leaves. Bring to a boil, then lower the heat. Cover and cook until the beef becomes tender.

  5. Add the carrots, potatoes, and green olives. Stir to combine.

  6. Add the liver spread and chili flakes. Continue cooking for 8 to 10 minutes, stirring occasionally, until the sauce thickens.

  7. Add the red and green bell peppers. Cook for about 3 minutes.

  8. Season with salt and ground black pepper to taste.

  9. Serve hot with steamed white rice.
