Batchoy

Iloko's hearty noodle soup with pork, liver, and shrimp broth. Rich, savory, and loaded with vegetables and herbs.

Ingredients

  • 400 g Pork bones (for broth)
  • 80 g Pork liver, sliced
  • 120 g Pork neck, sliced
  • 120 g Shrimp
  • 1.6 cups Banilla
  • 80 g Green papaya, julienned
  • 40 g Carrot, julienned
  • 0.8 pcs Sliced onions
  • 0.8 tbsp Chili oil or red chili
  • 0.8 tbsp Peanuts, crushed

Instructions

  1. Simmer pork bones in water for 2 hours to make broth. Add shrimp for the last 30 minutes.

  2. Cook banilla noodles in separate pot. Drain.

  3. Sear the pork neck and liver briefly. Set aside.

  4. Assemble: noodles in bowl, ladle hot broth. Top with pork, liver, papaya, carrots, onions, peanuts, and chili oil.
