Bangus Filipino Paksiw

Traditional Filipino bangus filipino paksiw recipe

Ingredients

  • 2.25 kg Bangus
  • 1.12 cup Vinegar
  • 4.5 tbsp Tamarind
  • 4.5 pieces Onions
  • 4.5 pieces Tomatoes
  • 4.5 slices Ginger
  • 6.75 pieces Chili Peppers
  • 2.25 tsp Sugar

Instructions

  1. Clean the bangus, remove the head and bones, and cut into serving-sized portions. Score the flesh lightly.

  2. In a wide pan, heat a small amount of oil over medium heat. Sauté the ginger and garlic until fragrant.

  3. Add the sliced onions and tomatoes. Cook for 2 minutes until softened.

  4. Pour in the vinegar and tamarind juice. Bring to a simmer.

  5. Add the sliced chili peppers and sugar. Stir until the sugar dissolves.

  6. Carefully place the bangus pieces in the simmering liquid. Spoon the sauce over the fish and cook for 5–6 minutes until the fish is cooked through.

  7. Season with fish sauce to taste. Serve hot with steamed rice.
