Pro Tips

**Chef's Tips & Troubleshooting:**

- Cook the filling first until any moisture evaporates, then add the beaten eggs.

- Fry the omelette over medium heat so the eggs cook through without burning the bottom.

- For fried fish, score the skin lightly so the heat penetrates evenly and prevents curling.

- Squeeze calamansi or lemon over seafood just before serving for a bright, fresh finish.

Cooking Tips

Seafood cooks quickly — remove it from heat the moment it turns opaque and flakes easily with a fork. Overcooking makes it tough and rubbery. Pat shellfish dry before adding to the pan so they sear rather than steam. A hot, quick cook preserves their natural sweetness. Have all your ingredients prepped and measured before you start cooking — quick dishes leave no time for chopping mid-recipe.

Ingredient Substitutions

Short on time? A pressure cooker (Instant Pot) can reduce cooking time by roughly half for most braised and stewed Filipino dishes. Reduce liquid slightly since less evaporates.

Storage & Reheating

Store in an airtight container in the refrigerator for up to 3–4 days. The flavors often deepen overnight, making leftovers even more delicious. Seafood dishes are best consumed within 1–2 days. Reheat gently — microwave on low power or warm in a covered skillet over low heat to avoid overcooking. Do not refreeze thawed seafood dishes. Once reheated, consume immediately and do not re-refrigerate. Reheat on the stovetop over medium-low heat, adding a splash of water or broth if the sauce has thickened during storage. Microwave in 30-second bursts, stirring between each.

Prep: 5 min Cook: 15 min Total: 20 min Medium Serves 4

Instructions

  1. Heat the instant noodles by boiling water in a cooking pot. Add noodles and then cook until soft. Discard the water after cooking.
  2. While cooking the noodles, prepare the sardines. Separate the fish from the sauce. Put the fish in a bowl. Mash. Crack 2 eggs and place it in the same bowl. Mix with the mashed sardines. Season with ground black pepper and salt. Set aside
  3. Add the cooked noodles in the bowl with the sardine mixture. Mix
  4. Add flour and green onion. Continue mixing until all ingredients are well blended.
  5. Heat oil in a pan. Scoop around ½ cup of mixture and cook one side for 1 ½ minutes. Top with green onion and then flip to cook the other side using the same duration. Remove from the pan and arrange on a clean plate. Note: do this step until the mixture is totally consumed.
  6. Prepare the sauce by heating oil in a pot. Sauté onion until soft. Pour the sauce into the pot and then cook for 30 seconds. Add remaining green onions. Stir.
  7. Top the sauce over the sardines and noodle omelet. Serve.
