Tibok-Tibok

Tibok-Tibok made of fresh carabao's milk and topped with latik is smooth, creamy, and delicious! This milk pudding is a popular Kapampangan delicacy and makes a great snack or dessert.

Ingredients

  • 1 cup coconut cream
  • 4 cup fresh carabao's milk (or cow's milk)
  • 1 cup rice flour
  • 1 cup sugar
  • 0.5 tsp salt (if using cow's milk)
  • 7 x 5 in pan

Instructions

  1. Mix the rice flour, sugar, and coconut milk together in a saucepan. Stir until it's smooth.

  2. Cook on medium heat, stirring constantly, until the mixture thickens.

  3. Move it to a  dish and spread evenly.

  4. Let cool before cutting into serving pieces.
