Tahong Bicol Express

Instructions
Clean the mussels by scrubbing the shells and removing the beards. Soak in cold water for 10 minutes, then drain and rinse well.
Heat cooking oil in a large pot over medium heat. Sauté the garlic and onions until softened and aromatic.
Add the shrimp paste and chopped chili peppers, stir-fry for 30 seconds until fragrant.
Pour in the coconut milk and bring to a gentle simmer.
Add the cleaned mussels to the pot. Cover and cook for 4–5 minutes until the mussels open. Discard any that remain closed.
Simmer uncovered for 2 minutes to let the sauce thicken slightly. Taste and adjust seasoning.
Garnish with sliced green onions and serve hot with steamed rice.
