Pro Tips

**Chef's Tips & Troubleshooting:**

- For smooth juices, strain through a fine mesh sieve to remove pulp and seeds.

- Chill ingredients before blending for a refreshing cold drink straight from the blender.

- Blend tropical fruits with coconut milk for authentic Filipino flavor profiles.

Cooking Tips

Chill all ingredients beforehand so you don't have to dilute the drink with ice, which waters down the flavor. Taste and adjust sweetness gradually — cold temperatures mute sweetness, so what seems just right cold may be too sweet once it warms up. Have all your ingredients prepped and measured before you start cooking — quick dishes leave no time for chopping mid-recipe.

Ingredient Substitutions

Short on time? A pressure cooker (Instant Pot) can reduce cooking time by roughly half for most braised and stewed Filipino dishes. Reduce liquid slightly since less evaporates.

Storage & Reheating

Store in an airtight container in the refrigerator for up to 3–4 days. The flavors often deepen overnight, making leftovers even more delicious. Refrigerate immediately and consume within 24 hours for the freshest flavor. Stir or shake well before serving, as ingredients may separate during storage. Reheat on the stovetop over medium-low heat, adding a splash of water or broth if the sauce has thickened during storage. Microwave in 30-second bursts, stirring between each.

Taho

Taho

Metro Manila, NCR

Taho is a Filipino delicacy made of silken tofu, sago pearls, and brown sugar syrup. It's a delicious vegan soy dessert traditionally enjoyed for breakfast or any time you need a quick boost of energy.

Prep: 5 min Cook: 15 min Total: 20 min Hard Serves 1

Instructions

  1. In a pot over medium heat, bring enough water to cover the sago pearls to a boil. Add the sago, stir gently, and cook for 10 minutes until translucent. Remove from heat, rinse well, and drain.
  2. Return the sago to the pot with fresh cold water and bring to a gentle boil again. Cook 6-10 minutes more, rinse, and drain. Repeat this process once more if the pearls still have a white center.
  3. In a saucepan over medium heat, bring water and pandan leaf to a boil for 2-3 minutes. Remove and discard the pandan leaf.
  4. Add the brown sugar to the pandan water. Stir continuously until dissolved, then simmer until the syrup is slightly thickened.
  5. Stir in the cooked sago pearls. Cook 2-3 minutes more to warm through.
  6. Place the tofu block in a cheesecloth-lined steamer and steam for 7-10 minutes until heated through. Alternatively, wrap the tofu loosely in plastic and microwave for 40-50 seconds.
  7. Spoon the warm tofu into serving bowls. Top generously with the sago and syrup. Serve warm.
