A healthy, meatless twist on the classic Kapampangan sisig. Extra crispy tofu cubes and earthy mushrooms tossed in a tangy, spicy soy-calamansi dressing with vegan mayonnaise, red onions, and green chilies.

Instructions

  1. In a pan, heat cooking oil and deep-fry the tofu cubes until golden and crispy. Drain excess oil and set aside.
  2. In a separate pan, sauté half of the red onions and the minced mushrooms until the mushrooms are slightly browned.
  3. In a small bowl, mix the soy sauce, calamansi juice, mayonnaise, salt, and pepper.
  4. Add the crispy tofu and the remaining fresh red onions into the pan with the mushrooms.
  5. Pour the mayo-soy dressing over the mixture and toss everything together until evenly coated.
  6. Add the sliced green chilies and cook for another 2 minutes on high heat.
  7. Transfer to a pre-heated sizzling plate if available, and serve immediately with steamed rice.
