Shrimp Scampi

Plump fresh shrimp are sautéed in olive oil with copious minced garlic, dry white wine, and fresh lemon juice until pink and tender, then tossed with sliced white mushrooms and served over pasta for a bright, buttery seafood dish.

Ingredients

  • 2 large bs. fresh shrimp
  • salt and pepper to taste
  • 2 olive oil
  • 0.5 piece onion (sliced)
  • 2 tbsp minced garlic
  • 3 tbsp lemon juice (freshly squeezed)
  • 1 cup sliced white mushrooms
  • 0.5 cup wine (white)
  • 0.5 cup stock (preferably seafood stock)
  • 2 tbsp butter

Instructions

  1. Before learning how to make shrimp scampi, you first need to shell and devein the shrimp properly. Gently peel off the shell off of each shrimp, only leaving the tails. Season the shrimp with a pinch of salt and pepper.

  2. Coat a large pan with olive oil and place it over medium high heat. Add shrimp and sauté until it starts to turn pink. Remove from heat and transfer shrimp into a bowl. Set aside for later.

  3. Sauté onion slices in the same pan for 2 minutes or until soft and translucent.

  4. Add garlic and mushrooms, then sauté for another 2 minutes.

  5. Pour in the lemon juice, wine and seafood stock. Return the shrimp to the pan.

  6. Add butter and allow it to melt in the liquids. Combine ingredients thoroughly and dish out on a large plate to serve. You can top this on rice or pasta.
