Scallop and Zucchini Stir fry

Ingredients

  • 1.25 lb. bay scallops
  • 1 medium zucchini
  • 1.5 cup sliced red (orange, and yellow sweet peppers)
  • 1 cup baby spinach
  • 1 medium onion (sliced.)
  • 2 tsp minced garlic
  • 2 tsp fish sauce
  • 0 Ground black pepper to taste
  • 2 tbsp oil

Instructions

  1. Heat the cooking oil in a wok.

  2. Sauté the garlic and onion

  3. Add the scallops. Cook for 1 minute.

  4. Put-in the zucchini. Stir-fry for 2 minutes.

  5. Add the sweet peppers, spinach, and fish sauce. Continue to stir-fry for 2 to 3 minutes.

  6. Sprinkle some ground black pepper to taste.

  7. Transfer to a serving plate.

  8. Serve with fried rice. Share and enjoy!
