Sarciado

Traditional Filipino sarciado recipe

Ingredients

  • 825 g Pork
  • 5.5 tbsp Shrimp Paste
  • 8.25 tbsp Vinegar
  • 11 pieces Chili Peppers
  • 8.25 cloves Garlic
  • 2.75 tsp Sugar

Instructions

  1. Heat oil in a large pot over medium heat. Add the shrimp paste and fry briefly until it darkens and becomes fragrant, about 30 seconds.

  2. Add the sliced pork and brown on all sides. Stir in the garlic and cook for 1 minute.

  3. Pour in the vinegar and let it bubble and reduce for 2 minutes to mellow the acidity.

  4. Add the sliced chili peppers, sugar, and enough water to partially cover the meat. Bring to a boil.

  5. Reduce heat to low, cover, and simmer for 25–30 minutes until the pork is tender and the flavors have melded.

  6. Adjust seasoning with more sugar or fish sauce if needed. Serve hot with steamed rice.
