Salted Egg Chicken

Filipino salted egg chicken recipe

Ingredients

  • 300 g Chicken
  • 3 pieces Salted Egg Yolks
  • 1 pieces Egg Whites
  • 0.25 cup Milk
  • 0.25 cup Cooking Oil
  • 0.25 tsp Black Pepper
  • 0.5 tbsp Chinese Black Vinegar

Instructions

  1. Pat the chicken pieces dry and season with salt and pepper. Heat half the cooking oil in a wok over medium-high heat.

  2. Fry the chicken for 4 minutes per side until golden brown and cooked through. Remove and set aside on paper towels.

  3. In a small bowl, mash the salted egg yolks with the egg whites and a splash of milk until smooth and creamy.

  4. Heat the remaining oil in the wok. Add the sesame paste, soy sauce, oyster sauce, and chili sauce. Stir-fry for 1 minute.

  5. Pour in the mashed salted egg mixture, egg whites, and milk. Stir constantly over low heat until the sauce thickens into a glossy, golden coating.

  6. Return the chicken to the wok and toss vigorously until every piece is evenly coated in the salted egg sauce.

  7. Serve hot with steamed rice and a squeeze of calamansi on the side.
