Pumpkin Muffins

Filipino-style muffins — moist, sweet, and often with fruits or nuts baked in. A delicious Filipino dish.

Ingredients

  • 3 cup all purpose flour
  • 1.5 cup canned pumpkin
  • 1.25 cup granulated white sugar
  • 3 eggs
  • 1.5 tsp baking powder
  • 1 tsp baking soda
  • 8 tbsp water
  • 9 tbsp canola oil
  • 1 tsp ground cinnamon
  • 1.5 tsp ground nutmeg
  • 1.5 cup coarse white sugar

Instructions

  1. Preheat oven to 375F.

  2. Grease the muffin tray with a cooking spray. Set the pan aside for now.

  3. In a large mixing bowl, combine the flour, granulated sugar, baking powder, baking soda, cinnamon, and nutmeg. Mix well.

  4. Add the pumpkin, eggs, water, and oil. Continue to mix until all the ingredients are well blended.

  5. Scoop part of the mixture and place into the muffin tray. Sprinkle the coarse sugar on top.

  6. Bake for 20 to 30 minutes.

  7. Remove from the oven and let the temperature reduce to room temp.

  8. Serve with hot coffee or hot chocolate.
