Pastillas de Leche

Ingredients

  • 3.75 cups fresh milk (carabao or whole cow's milk)
  • 0.75 cup sugar
  • 0.38 tsp lime or calamansi zest
  • 1.5 tablespoon butter
  • 0.56 cup full cream powdered milk
  • 0 Roll pastillas in the remaining ⅓ cup sugar until fully coated

Instructions

  1. In a wide, nonstick skillet on low heat, combine milk and ⅔ cup of the sugar, and stir until sugar is dissolved.

  2. Cook, regularly stirring and scraping sides and bottom of the pan, for 1 to 1 ½ hours or until milk is reduced and mixture turns into a thin paste.

  3. Add lime zest and stir to combine.

  4. Add butter and powdered milk and stir until it's smooth and well combined.

  5. Keep cooking for 3 to 5 minutes or until the mixture begins to pull from sides of the pan and turns into a soft dough.

  6. Transfer mixture into a lightly oiled plate and allow to cool to touch.

  7. Divide mixture into about 40 portions and roll each portion into logs of about 1-inch long.

  8. Roll pastillas in the remaining ⅓ cup sugar until fully coated.

  9. Wrap individually in Japanese paper.
