Linguine Pasta with Clams

Ingredients

  • 1.5 lb round clam (cleaned)
  • 1 large b. linguine
  • 2 tbsp chopped red bell pepper
  • 2 tbsp chopped green bell pepper
  • 3 stalks scallions (finely chopped)
  • 1 small yellow onion (minced)
  • 1 tsp minced garlic
  • 1 cup dry white wine
  • 3 oz bottled clam juice
  • 3 tbsp extra virgin olive oil
  • 0 Salt to taste

Instructions

  1. Cook the linguine according to package instructions. Set aside in a large bowl.

  2. Heat the olive oil in a sauté pan.

  3. Add the onion and garlic. Cook until the onion turns soft.

  4. Add the red and green bell peppers and clams. Stir.

  5. Pour-in white wine and clam juice. Continue to cook until the liquid reduces in half.

  6. Add scallions and salt.

  7. Pour the cooked clams along with the sauce over the cooked linguine pasta. Toss.

  8. Serve. Share and enjoy!
