Pro Tips

**Chef's Tips & Troubleshooting:**

- Taste the dish before adding extra salt — cheese, broth, and cured meats already contribute saltiness.

- Let the dish rest for a few minutes after cooking to allow the flavors to meld together.

- Taste and adjust seasoning gradually throughout cooking rather than all at once at the end.

- For stir-fries, have all ingredients ready before you start — the cooking process goes very fast.

Cooking Tips

Cook pasta to al dente (firm to the bite) — it will continue cooking slightly when tossed with hot sauce. Reserve a cup of pasta water before draining to adjust sauce consistency. Taste the sauce before serving and adjust salt, pepper, and cheese. Dried pasta absorbs seasoning, so don't be shy.

Ingredient Substitutions

Short on time? A pressure cooker (Instant Pot) can reduce cooking time by roughly half for most braised and stewed Filipino dishes. Reduce liquid slightly since less evaporates.

Storage & Reheating

Store in an airtight container in the refrigerator for up to 3–4 days. The flavors often deepen overnight, making leftovers even more delicious. Reheat on the stovetop over medium-low heat, adding a splash of water or broth if the sauce has thickened during storage. Microwave in 30-second bursts, stirring between each.

Instructions

  1. Fill a pot with water and bring to a boil. Sprinkle a pinch of salt in water and toss is the pasta.
  2. While the pasta cooks, heat 2 tablespoons of olive oil in a pan. Sauté the onions and garlic for 5 minutes. Add minced meat and seasoning, and cook until brown and soft. Remove from heat.
  3. When the pasta is cooked but still slightly undercooked, remove from heat and drain the water. Wait for it to cool. Layer the bottom of a casserole dish with the al dente pasta. Add the meat and pat the surface with a spatula to make sure it is level.
  4. Pour the cheese sauce on top of the meat and level with a spoon. Finally, sprinkle the grated cheese, making sure the top is fully covered.
