Kwek-Kwek (Quail Egg)
Quail eggs in bright orange cornstarch batter, deep-fried golden.
Instructions
Peel hard-boiled quail eggs and poke with a toothpick.
Mix cornstarch, water, sweet potato powder, annatto, and salt to make orange batter.
Dip eggs in batter and deep-fry at 170C until crispy.
Serve with banana ketchup-vinegar-siling labuyo dipping sauce.
