Kare-Kare (Classic)
Peanut-based stew with oxtail, beef shank, and vegetables.
Instructions
Boil oxtail and beef shank for 1.5 hours until tender. Reserve broth.
Blend annatto seeds with broth for annatto oil.
Saute peanut butter in annatto oil, add broth gradually.
Add meat and vegetables. Simmer 30 minutes. Serve with bagoong.
