Ginataang Kalabasa, Sitaw at Hipon

Ginataang Kalabasa, Sitaw at Hipon is a Filipino vegetable stew made with kabocha squash, shrimp, and long beans cooked in coconut milk. It's creamy, spicy, and delicious with steamed rice!

Ingredients

  • 1 tbsp canola oil
  • 1 onion, peeled and chopped
  • 3 clove garlic, peeled and minced
  • 1 tbsp fish sauce
  • 2 cup coconut milk
  • 2 finger chili peppers
  • 2 cup kalabasa (kabocha squash), pared, seeded and cut into 2-inch chunks
  • 2 cup sitaw (long beans), ends trimmed and cut into 3-inch lengths
  • 0.5 lb large shrimp, tendrils trimmed
  • 0 salt to taste

Instructions

  1. Warm oil in a pot and sauté the garlic and onion until fragrant.

  2. Add the main ingredients and cook briefly.

  3. Pour the coconut milk and bring to a gentle simmer. Do not let it boil violently.

  4. Add salt, fish sauce, or shrimp paste to taste.

  5. Simmer until the ingredients are cooked through and the sauce thickens slightly.
