Pro Tips

**Chef's Tips & Troubleshooting:**

- Let the oven fully preheat before putting the dish in for consistent cooking.

- Use a meat thermometer to check doneness rather than relying on cooking time alone.

- Cook chicken until the internal temperature reaches 165°F at the thickest part of the breast.

- For chicken adobo, let the meat rest in the marinade overnight for the best flavor penetration.

Cooking Tips

For the most tender results, cook low and slow — a gentle simmer (not a vigorous boil) breaks down connective tissue without drying out the meat. Taste and adjust seasoning toward the end of cooking. As liquids reduce, flavors concentrate, so what tastes balanced early may become too salty later. Check liquid levels halfway through cooking and add hot water or broth if needed. Long-cooked dishes can dry out or burn if left unattended.

Ingredient Substitutions

Chicken alternatives: Pork shoulder or boneless thigh meat can substitute for chicken in stews. For lighter fare, extra-firm tofu or seitan works in stir-fries and braises. Short on time? A pressure cooker (Instant Pot) can reduce cooking time by roughly half for most braised and stewed Filipino dishes. Reduce liquid slightly since less evaporates.

Storage & Reheating

Store in an airtight container in the refrigerator for up to 3–4 days. The flavors often deepen overnight, making leftovers even more delicious. Reheat on the stovetop over medium-low heat, adding a splash of water or broth if the sauce has thickened during storage. Microwave in 30-second bursts, stirring between each.

Garlic Roast Chicken

Garlic Roast Chicken

Metro Manila, International

Made with chicken, knorr liquid seasoning, head garlic and lemon — a hearty Filipino dish that's simple to cook and satisfying to share.

Prep: 30 min Cook: 70 min Total: 100 min Medium Serves 17

Instructions

  1. Preheat oven to 450F
  2. Pat chicken dry with a paper towel and arrange on a roasting pan.
  3. Crush the garlic and rosemary using a mortar and pestle tool until the texture becomes paste-like.
  4. Make the compound butter by mashing the butter using a fork. Add the garlic and rosemary paste and season with Knorr Liquid Seasoning. Mix well. Set aside.
  5. Place the chicken on a clean cast iron pan or a baking tray.
  6. Loose the skin from the meat by sliding your fingers between the meat and the skin. Spread the compound butter between the meat and skin of the chicken. Put the remaining butter inside the cavity.
  7. Squeeze lemon all over the chicken and sprinkle salt and ground black pepper. Stuff the lemon peel inside the cavity.
  8. Put the chicken inside the oven and bake for 20 minutes. Lower the temperature to 350F and continue baking until the internal temperature reaches 165F (it took me 50 minutes for this step, total baking time is 70 minutes).
  9. Remove the chicken from the oven. Cover with aluminum foil and let the chicken rest for 20 minutes.
  10. Serve.
