Fish in Ginger Soup

Fish in Ginger Soup — fresh seafood prepared Filipino-style with garlic, vinegar, and calamansi. Briny, savory, and deeply flavorful.

Ingredients

  • 1.5 lb fish fillet (red snapper or whiting)
  • 1 tbsp ginger (sliced into thin stips)
  • 1 piece yellow onion (sliced)
  • 2 tbsp fish sauce
  • 1.25 tsp ground black pepper
  • 2 cup malunggay leaves
  • 3 stalks lemongrass (tanglad, crushed)
  • 4 cup water
  • 1.5 piece lemon
  • 1 tbsp oil

Instructions

  1. Heat the cooking oil in a deep pot

  2. Saute the ginger and onions for 1 minute

  3. Put-in the ground black pepper and lemongrass. Cook for another minute.

  4. Pour-in water. Let boil.

  5. Add-in the fish and fish sauce. Let the liquid re-boil and then simmer for 5 to 8 minutes.

  6. Put-in the malunggay leaves and the juice from half a lemon. Gently stir and cook in low to medium heat for 3 minutes.

  7. Serve.
