Filipino curry noodles recipe
Instructions
Boil water in a pot. Add the whole curry leaves and cook the chicken pieces until tender, about 12–15 minutes. Remove the chicken, shred it, and set aside. Reserve the cooking liquid.
In a separate pan, heat a little oil and sauté the garlic, onions, carrots, and bell peppers until softened.
Add the instant noodles (noodle block only, not the seasoning packet) to the chicken cooking liquid and cook until just softened, about 2 minutes.
Drain the noodles, then return them to the pan with the vegetables. Add the shredded chicken.
Pour in the milk and simmer gently for 2 minutes until creamy. Season with salt and pepper to taste.
Crack an egg into the simmering curry noodles and gently stir until the egg is just cooked through.
Serve hot garnished with sliced green onions.
