Cucumber Tomato Salad

Instructions
Thinly slice the cucumber (half-moons or ribbons), thinly slice the red onion, and cut the bell pepper into thin strips.
In a small bowl, whisk together the olive oil, lime juice, salt, sugar, and black pepper until the sugar dissolves.
Combine all the sliced vegetables in a serving bowl.
Pour the dressing over the vegetables and toss well to coat everything evenly.
Let the salad rest for 10 minutes to allow the flavors to meld. Serve chilled or at room temperature.
