Crispy Pata
Whole pork leg boiled in spices then deep-fried ultracrispy. A feast centerpiece.
Instructions
Boil pork leg with spices for 2 hours until tender.
Dry completely overnight in refrigerator.
Roast at 400F for 30 minutes. Deep fry at 375F 10-15 minutes until rock-crispy skin.
Rest 10 minutes. Carve and serve with soy-calamansi dipping sauce.
