Crispy Pata

Whole pork leg boiled in spices then deep-fried ultracrispy. A feast centerpiece.

Ingredients

  • 1.38 leg Pork Leg whole
  • 4.12 pieces Bay Leaves
  • 4.12 pieces Star Anise
  • 6.88 pieces Siling Habula
  • 1.38 head Garlic whole
  • 2.75 tbsp Salt
  • 1.38 tbsp Black Peppercorns
  • 5.5 cups Cooking Oil

Instructions

  1. Boil pork leg with spices for 2 hours until tender.

  2. Dry completely overnight in refrigerator.

  3. Roast at 400F for 30 minutes. Deep fry at 375F 10-15 minutes until rock-crispy skin.

  4. Rest 10 minutes. Carve and serve with soy-calamansi dipping sauce.
