Creamy Pininyahang Manok

Filipino creamy pininyahang manok recipe

Ingredients

  • 1050 g Chicken
  • 3.5 cups Pineapple
  • 0.88 cup Cream
  • 1.75 piece Bell Pepper
  • 7 cloves Garlic
  • 1.75 piece Onions
  • 3.5 tbsp Soy Sauce
  • 5.25 pieces Bay Leaves
  • 0.44 cup Cashews
  • 0.44 cup Prunes

Instructions

  1. Cut the chicken into serving pieces. Heat oil in a large pot over medium heat and sear the chicken until golden on all sides. Remove and set aside.

  2. In the same pot, sauté the garlic and onions until softened. Add the bay leaves.

  3. Pour in enough water to cover the chicken, add the soy sauce and pineapple juice. Bring to a boil, return the chicken, and simmer for 20 minutes until tender.

  4. Add the pineapple chunks, bell peppers, cashews, and prunes. Simmer for 10 more minutes.

  5. Pour in the cream and simmer for 5 minutes without boiling to keep it smooth.

  6. Thicken the sauce with a cornstarch slurry if needed. Season to taste and serve hot with steamed rice.
