Chicken Sotanghon Soup with Patola

Ingredients

  • 625 g Chicken
  • 250 g Sotanghon
  • 1.25 piece Patola
  • 2.5 pieces Carrots
  • 1.25 piece Onions
  • 3.75 cloves Garlic
  • 2.5 tbsp Fish Sauce
  • 0.62 tsp Black Pepper
  • 3.75 stalks Green Onions
  • 2.5 tbsp Cooking Oil

Instructions

  1. Season the chicken pieces with salt and black pepper. Heat cooking oil in a large pot over medium-high heat.

  2. Brown the chicken on all sides, about 3–4 minutes per side. Remove and set aside.

  3. In the same pot, sauté the garlic and onions until softened.

  4. Add the diced carrots, patola slices, and the chicken back into the pot. Pour in enough water to cover and bring to a boil.

  5. Reduce heat, add the fish sauce and black pepper to taste. Simmer for 15 minutes until the chicken and vegetables are cooked through.

  6. Add the sotanghon (glass noodles) and cook for 2–3 minutes until the noodles are tender and translucent.

  7. Adjust the seasoning and simmer for 1 more minute. Garnish with sliced green onions and serve hot as a soup.
