Cassava Cake with Custard Topping

Cassava-based dessert — chewy, sweet, and often topped with coconut or custard. A Filipino classic.

Ingredients

  • 1 tbsp butter or margarine, melted
  • 1 (16 ounces) frozen grated cassava, thawed but NOT drained
  • 1 bottle (12 ounces) macapuno strings, drained
  • 1 can coconut milk
  • 1 can sweetened condensed milk
  • 0.25 cup sugar
  • 2 egg yolks
  • 198.4 g (7 oz) condensed milk
  • 170.1 g (6 oz) evaporated milk

Instructions

  1. Preheat the oven to the specified temperature and prepare your baking pan.

  2. Cream the butter and sugar together, then beat in the eggs.

  3. Fold in the flour and dry ingredients alternately with any liquid ingredients.

  4. Pour or spread the batter into the prepared pan.

  5. Bake it until a toothpick comes out clean when you poke the center.

  6. Cool in the pan before removing.
